The icon of Roman-Jewish cooking: a whole artichoke is fried twice in plenty of olive oil, so the leaves come out crisp as chips while the heart stays soft. The Roman artichoke (carciofo romanesco) arrives in February, peaks in March and April and is gone toward May; in season every eatery in the ghetto makes it. The same menus also carry carciofo alla romana, braised with olive oil and mint.

Rome’s milk-fed lamb, abbacchio, is marinated with olive oil and herbs and grilled over coals. The name means ‘finger-scorcher’, because it is eaten piping hot, held by hand and stripped straight off the bone. A fixture of trattoria menus; the oven-roasted version with potatoes, abbacchio al forno, is common too.
